Standing seam

Standing seam works because nothing goes through the panel.

Every metal roof is a set of panels and a set of fasteners. What distinguishes standing seam from the panels on an agricultural building is where those fasteners are: inside the seam rather than through the face. That one property explains the price, the service life, the detailing rules and nearly every way the system can be got wrong.

The fastener is concealed
Panels attach to the deck through clips hidden inside the raised seam, so the water plane in the field of the roof is unbroken. No gaskets in the sun, no fasteners to back out, and no annual re-screwing. That is the whole argument for the system.
Panels move, and the clips decide how
Steel and aluminum expand along their length in heat, and a long panel on a Texas roof moves a meaningful amount between a February morning and an August afternoon. Fixed clips pin a panel at a chosen point; floating clips let it slide. Panel length and orientation determine which is correct, and getting it wrong shows as distorted seams, oil canning and elongation at the eave.
Snap-lock against mechanically seamed
Snap-lock panels click together and are used on residential roofs above a stated minimum pitch. Mechanically seamed panels are folded closed on site with a seaming machine, to ninety or a hundred and eighty degrees, and are specified for lower slopes and higher exposure. It is a specification decision, not an upgrade tier.

It needs the right underlayment

A metal roof over a solid deck runs hot enough to break down a standard synthetic underlayment. A high-temperature self-adhered membrane or a rated synthetic is a requirement of the assembly rather than an optional line on the estimate, and it is worth confirming by product name.

Penetrations carry the whole risk

Every pipe, vent, curb and mount interrupts a panel. Metal-specific boots and curbs are used, and they are placed relative to the seams rather than wherever the plumbing happens to come through. The common late failure is a solar or satellite mount drilled through the flat of a panel by someone who did not know what they were undoing.

Hail, and what a dent means here

A dent in a standing-seam panel is usually cosmetic: the water plane is not opened and the roof carries on working. Whether that matters depends on how visible the slope is and what the owner is prepared to look at. Function and appearance resolve differently and should be discussed as two separate questions.

Is a standing seam roof noisier in rain?

Over a solid deck with underlayment and an insulated attic beneath it, far less than the stereotype suggests. The noise people are remembering comes from panels over open purlins with nothing behind them. Assembly is what decides it, not the metal.

Can standing seam go over an existing roof?

Sometimes, over battens or purlins on a sound deck. Weight, deck condition, ventilation, the height it adds at every flashing, and the local rule on layers all bear on it. It is a question to answer on the specific building rather than in general.

Why does the installer keep asking about panel length?

Because thermal movement scales with it. Long panels need a clip and attachment strategy that lets them move; short ones are less demanding. A quote that has not established the panel runs has not established the system.

Somebody needs to mount solar on it. What has to happen?

Non-penetrating clamps that grip the seam itself, rather than anything drilled through the flat of a panel. That is the entire point of the system: the water plane across the field is unbroken, and a mount screwed through it undoes what the roof was bought for. The attachment also has to respect thermal movement, because a fixed array on a panel designed to slide is a new problem. Establish the method with the installer before anybody is on the roof.
