A useful cost discussion explains the quantity and risk behind the total. Prices without date, market, property, and scope context can mislead more than they help.

In short
Measured roof area, pitch, stories, facets, valleys, dormers, edges, penetrations, and access affect labor and material.

Layer count, material weight/type, deck access, protection, hauling, and disposal are real scope items.

Clarify products, quantities, layers, reuse/replacement rules, allowances, exclusions, changes, payment, and closeout before comparing totals.
Questions
A rough model can route expectations, but a responsible proposal needs property measurements, system choice, access, details, and condition information.
Usually because they are not pricing the same roof. The common causes are a different measurement, a different assumption about how much decking will need replacing, one including the flashings and ventilation while the other leaves them out, and one pricing a tear-off where the other has quietly allowed for a layover. Put them side by side line by line and most of the gap explains itself.
Access and product, mostly, and neither by a great deal. Geometry, pitch, storeys and roof area are fixed by the house you own. What is genuinely a choice is the covering and the accessories specified with it, whether the work is combined with anything else that needs the gutters off, and how much of the site the crew is able to use. Everything else on the list describes your roof rather than offering a lever.
There is no figure worth quoting you, and the useful question is what a payment is tied to rather than how large it is. A deposit tied to material being ordered or delivered is doing something identifiable. A substantial cash sum requested before anything has arrived at the property moves all of the risk onto you. Ask what each payment corresponds to, and have the schedule written into the contract.
